To make 12 pies you will
need;
4 cooking
apples
3 tablespoons of orange juice or
cold water
2 teaspoons of castor
sugar
50g (2oz) dried cranberries or
sultanas
½ teaspoon of ground
cinnamon
100g (4oz) filo pastry (about 6
sheets)
Plastic food
wrap
50g (2oz)
butter
2 teaspoons of icing
sugar
A baking tray with shallow pans or
12 – hole muffin tin
Heat you oven to 190 degrees
centigrade, 375 Fahrenheit, gas mark 5.
Peel and cut the apples into small
pieces and remove the cores. Add the apples to a pan with the
orange juice or water. Cook for 20 minutes on a low heat, stirring
often. Stir in the castor sugar, cinnamon and dried fruit. Continue
to cook for a further 5 minutes. Unwrap the pastry. Cut the 6 pastry sheets
into 6 squares (total of 36 small squares) and cover them with a
plastic food wrap. Put the butter into a small pan and melt over a
low heat. Brush a little butter over one of the pastry squares and
place into a hole in the tray butter side up. Brush butter on
another square and place this over the first one. Overlap the
corners slightly to begin to create a star shape. Butter and add a
third square. Repeat in all the holes to create 12 open pastry
cases. Put the tray on the middle shelf of the oven and cook for 10
minutes. Take it out and leave to cool for 5 minutes. Take the
pastry cases out of the tray and put them onto a large plate. Heat
the apples again for a further 2 minutes. Spoon the apple mixture
into the pastry cases, so that they are almost full. Sift the icing
sugar over them.
To make about 15 truffles you will
need;
175g (6oz) white chocolate
drops
25g (1oz) unsalted
butter
50g (2oz) plain sponge
cake
4 tablespoons of desiccated
coconut
Small paper
cases
Fill a large pan a quarter full of
water and heat until the water bubbles. Then, remove the pan from
the heat. Add the chocolate drops and butter in the heatproof bowl
and lover the bowl into the pan. Stir the chocolate and butter
together until they melt. Once melted lift the bowl out of the
water.
Crumble the cake into fine crumbs
and add to the chocolate mixture. Stir well with a wooden spoon.
Spread the coconut onto a plate. Scoop up some of the chocolate
mixture with a teaspoon and put it into the coconut. With your
fingers, roll the chocolate in the coconut to make a ball. When it
is covered put it into a paper case. Make more truffles with the
rest of the mixture and put them on a plate and chill in the fridge
for about 1 hour.
